Banana Pancake Bites with Orange Honey Butter

YIELD: Makes 6 servings (makes 36 total bites)

INGREDIENTS

For Pancake Bites:
1/2 cup all-purpose flour
1/2 cup whole wheat pastry flour
1/4 tsp. sea salt
1 teaspoon baking powder
1 tablespoon Built by Bees Orange Blossom Honey
1 cup low-fat buttermilk
1 banana, mashed
1 large egg, beaten
2 tablespoons melted butter
1 teaspoon vanilla extract
For Honey Butter:
4 tablespoons Built by Bees Pecan Honey Butter, slightly warmed and softened
1 tablespoon Built by Bees Orange Blossom Honey
zest of 1 orange

DIRECTIONS

Preheat oven to 425°F.
In a large bowl, whisk both all-purpose and whole wheat pastry flours, salt and baking powder.
Add honey, buttermilk, mashed banana, egg, melted butter and vanilla extract to the bowl and mix until just combined.
Spray a mini muffin pan with cooking spray and pour heaping tablespoons of batter into the pan.
Bake for 8-10 minutes or until puffed and slightly golden.
Combine softened Built by Bees Pecan Honey Butter, Orange Blossom honey and orange zest. Mix either by hand or with an electric mixer. Mix on medium speed until creamy and well combined.
Transfer to a serving dish.
Remove pancake bites from oven and allow to cool slightly before removing from the pan. Repeat baking process as necessary to create all 36 bites (depending on size of pan).
Serve with honey butter.

TIP

Warm honey butter to soften slightly before serving.
These bites freeze well and can be made ahead or stored as leftovers in the freezer.
